Curtido - Salvadorian Slaw

  1. Bring a large pot of water to a boil.
  2. While waiting, whisk together all of the dressing ingredients.
  3. Once the pot of water has come to a boil, turn the heat off and add the cabbage.
  4. Allow the cabbage to wilt, no more than 1 minute.
  5. Drain.
  6. Add the carrots, onion and wilted cabbage to a large tupperware and add the dressing.
  7. Mix well and refrigerate.
  8. Let the slaw refrigerate for a minimum of 2 hours before serving.
  9. Mix and enjoy!
