Flourless Peanut Butter Banana Muffins

  1. Preheat the oven to 400 degrees F and line a 12-cup cupcake tray with paper liners.
  2. Set aside.
  3. Combine all the ingredients except for the toppings in a blender or food processor (I used my NutriBullet), and blend until well-combined, about 2-3 minutes.
  4. Use a kitchen scoop to divide the muffin batter evenly between the 12 lined muffin cups.
  5. Top each muffin with the desired toppings and bake at 400 degrees F for 16-18 minutes, until the muffins are golden brown.
  6. Let cool slightly, and enjoy!
