Tarragon Vinegar
- 20 oz rice or white wine vinegar
- 3 sprigs fresh tarragon
- 2 clove garlic
- 3 inch strip lemon zest
- 1 clean bottle or jar
- 1 clean bamboo skewer (optional)
- Place tarragon sprigs in bottle
- Place garlic and lemon zest in bottle - I thread mine midway on a bamboo skewer so they don't just lay on the bottom
- Fill bottle with vinegar to cover
- Let steep 2 weeks, keep indefinitely
