Midnight Mallow Cake
- 16 each marshmallows
- 3 ounces chocolate
- 3/4 cup water boiling
- 2 1/4 cups flour, all-purpose
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 3 large eggs
- 1 1/4 cups sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups sour cream
- 2 each egg whites
- 3/4 cup sugar
- 13 cup corn syrup, light
- 2 tablespoons water
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 6 each marshmallows chopped
- 1 teaspoon vanilla extract
- Melt marshmallows and chocolate in double boiler.
- Add boiling water, beating constantly until smooth.
- Remove from heat; cool.
- Sift together flour, soda, and salt.
- Beat eggs until foamy.
- Gradually add sugar, beating constantly, until thick and lemon colored.
- Add vanilla and the chocolate marshmallow mixture.
- Mix.
- Blend in sour cream.
- Add dry ingredients in four additions, mixing well after each addition.
- Pour into 2 well greased and flured 9 inch round pans bake 375F (190C) 25 to 30 minutes.
- Cool and frost.
- Fluffy Marshamallow Frosting: Combine egg whites, sugar, light corn syrup, water, cream of tartar and salt in top of double boiler.
- Cook over rapidly boiling water, beating constantly until mixture stands in peaks.
- Add marshmallows; beat until dissolved.
- Remove from heat.
- Add vanilla, continue beating until thick enough to spread.
