Savory Pork
- 1 lb. boneless pork, cut into 1-inch pieces
- 1 Tbsp. oil
- 1 medium onion, chopped
- 1 (16 oz.) can apricot halves in heavy syrup
- 1/2 c. bottled barbecue sauce
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1 medium green pepper, slivered
- 1 Tbsp. cornstarch
- 1/4 c. water
- 1 can pineapple pieces, drained (optional)
- Saute meat in oil in a 10-inch skillet for 10 minutes or until lightly browned.
- Add onion.
- Saute 2 to 3 more minutes.
- Drain apricots.
- Add syrup and barbecue sauce to pork.
- Add salt and black pepper.
- Bring to boil.
- Cover and simmer for 30 minutes or until meat is tender.
- Add green pepper.
- Cover and simmer for 10 minutes.
- Blend cornstarch and water.
- Stir in mixture.
- Cook, stirring, until thickened.
- Add apricots and pineapple; heat gently.
- Serve over rice or parsley noodles.
