Banana Nut Pancakes Recipe
- 1 pkt cream cheese - (3 ounce) softened
- 1/2 c. whipped topping
- 1 c. pancake mix
- 1 Tbsp. sugar
- 1 x egg
- 3/4 c. lowfat milk
- 2 tsp vegetable oil
- 1 med ripe banana mashed
- 1/2 c. minced pecans
- In a small mixing bowl, beat the cream cheese till smooth.
- Fold in whipped topping (mix will be stiff); set aside.
- In another bowl, combine pancake mix and sugar.
- Beat egg, lowfat milk and oil; add in to pancake mix and mix well.
- Mix in banana and pecans.
- Pour batter by 1/4 cupfuls onto a lightly greased warm griddle; turn when bubbles form on top of pancakes.
- Cook till second side is golden.
- Serve with cream cheese topping.
- This recipe yields 8 to 10 pancakes.
- Yield: 8 to 10 pancakes
