Sugarless Applesauce Cake
- 1 cup raisins, seedless
- 1 cup fruit dried, diced
- 2 cups water
- 2 cups flour, all-purpose
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg ground
- 1 1/2 teaspoons cinnamon ground
- 2 large eggs beaten
- 1 cup applesauce unsweetened
- 2 tablespoons artifical sweetener
- 3/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup nuts chopped
- Combine raisins, fruit and water in a saucepan.
- Cook, uncovered, until water is evaporated and fruit is soft; set aside to cool.
- Meanwhile, in a large mixing bowl combine flour, baking soda, salt, nutmeg and cinnamon; in another bowl, combine eggs, applesauce, sweetener, oil and vanilla.
- Add nuts and reserved fruit mixture; stir into dry ingredients, stirring to mix thoroughly.
- Pour into a greased 10-inch fluted tube pan and bake at 350F (180C) F for 35 to 40 minutes, or until cake tests done.
