Country Captain Chicken
- 1 cup plain yogurt
- 14 cup tomato paste
- 3 tablespoons chopped fresh mint leaves
- 2 tablespoons lemon juice
- 1 tablespoon minced garlic
- 1 teaspoon curry powder
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 12 teaspoon fresh ground black pepper
- 2 -4 chicken breasts
- Combine every ingredient but chicken in a large bowl.
- Add chicken to the mixture and ensure it is completely coated.
- Cover and refridgerate for at least 2 hours, but overnight is better.
- Grill chicken until cooked through.
