Tomato-Cheese Fillets(Microwave)

  1. Place margarine and onion in a 1-cup glass measure and cook on full power 1 1/2 minutes or until onion is soft. Arrange fish in a shallow baking dish with thicker edges of fish to outside of dish. Sprinkle salt and pepper over fish; cover with diced tomato pieces. Spread margarine and onions evenly over tomatoes. Cover with wax paper; cook 3 minutes on full power. Sprinkle with Parmesan cheese. Cover with waxed paper; cook 1 minute more or until fish flakes easily when tested with a fork. Sprinkle with paprika. Makes 4 servings.
