Garlic Shrimp And Mushrooms
- 2 Tbsp. butter or margarine
- 1 1/2 oz. Chablis
- 1/2 oz. brandy
- 1/4 tsp. salt
- 1/2 tsp. white pepper
- 1 Tbsp. Worcestershire sauce
- 2 c. seasoned rice, cooked, or rice pilaf
- 2 garlic cloves, minced
- 3 Tbsp. finely chopped shallots
- 1 c. mushrooms (fresh), thinly sliced
- 1 lb. shrimp, peeled and deveined
- 3 Tbsp. parsley, chopped
- Melt butter in skillet over medium heat.
- Saute garlic and shallots in butter mixture for 1 minute; add Chablis and brandy, salt, pepper and Worcestershire sauce.
- Add mushrooms and cook 1 minute more.
- Remove from heat.
- Arrange shrimp in a single layer in shallow baking dish.
- Pour butter-mushroom mixture over shrimp and broil for 10 minutes.
- Garnish with parsley and serve over rice.
- Makes 4 servings.
