Whiskey Fajita Roll Ups

  1. Heat a medium sauce pan over medium heat and add 1 Tablespoon of butter.
  2. Add onions and saute for about 3-4 minutes; add the chili powder and mushrooms and cook until mushrooms are softened.
  3. Heat a large saucepan over medium heat and drizzle some olive oil on the bottom.
  4. Add the fajita meat and cook for 7-10 minutes or until brown all over.
  5. In the last 3 minutes add the whiskey.
  6. Now add the chilies to onions and mushrooms and cook for another minute.
  7. Add salt, to taste.
  8. Get one tortilla at a time and add 3-4 slices of meat to the tortilla and top with a spoonful of onions, mushrooms, and about a Tablespoon of cheese.
  9. Roll up the tortilla very tightly and secure with a toothpick.
  10. Heat a small pan on low-medium heat and add the last Tablespoon of butter.
  11. Place the tortilla in the pan and turn after about a minute, heating long enough to lightly brown the tortilla.
  12. Serve with chips and salsa.
