Whiskey Fajita Roll Ups
- 2 Tablespoons Butter, Divided Use
- 1 whole Yellow Onion, Sliced
- 1/4 teaspoons Chili Powder
- 1/2 cups Mushrooms, Chopped
- 2 Tablespoons Olive Oil
- 1 pound Pre-seasoned Fajita Meat, Sliced
- 1/4 cups Whiskey
- 2 Tablespoons Green Chilies, Chopped
- 1/2 cups Cheese, Shredded
- 10 whole Fresh Tortillas
- Salt To Taste
- Heat a medium sauce pan over medium heat and add 1 Tablespoon of butter.
- Add onions and saute for about 3-4 minutes; add the chili powder and mushrooms and cook until mushrooms are softened.
- Heat a large saucepan over medium heat and drizzle some olive oil on the bottom.
- Add the fajita meat and cook for 7-10 minutes or until brown all over.
- In the last 3 minutes add the whiskey.
- Now add the chilies to onions and mushrooms and cook for another minute.
- Add salt, to taste.
- Get one tortilla at a time and add 3-4 slices of meat to the tortilla and top with a spoonful of onions, mushrooms, and about a Tablespoon of cheese.
- Roll up the tortilla very tightly and secure with a toothpick.
- Heat a small pan on low-medium heat and add the last Tablespoon of butter.
- Place the tortilla in the pan and turn after about a minute, heating long enough to lightly brown the tortilla.
- Serve with chips and salsa.
