Raspberry Bars

  1. Melt butter over low heat and add 2 cups vanilla chips.
  2. Let stand - DO NOT STIR.
  3. In large bowl, beat eggs until foamy.
  4. Gradually add sugar, beating until lemon colored.
  5. Stir in chips/butter mixture.
  6. Add flour, salt, almond extract.
  7. Mix to just combine.
  8. Spread 1/2 of the batter into prepared 9X13 pan.
  9. Bake at 325 degrees for.
  10. 15-20 minutes until golden.
  11. Stir remaining 2 cups vanilla chips into remaining batter.
  12. Melt raspberry jam and spread even over crust.
  13. Carefully spoon remaining batter over jam.
  14. Sprinkle with almonds.
  15. Bake an additional 30-35 minutes.
