Cod Fish Chowder
- 3 cups milk
- 3 cups water
- 1 onion, chopped
- 1 lb new potato, cubed
- 1 tablespoon fish bouillon cube
- 10 ounces frozen corn
- 1 lb cod fish fillet, boned and cut in 1 inch chunks
- Bring milk and water to simmer in a large pot.
- Add onion, potatoes, and bouillon.
- Simmer 12 minutes or until potatoes are tender.
- If you like a thicker chowder, remove a cup of the potatoes and puree in a blender or vegetable mill, then stir back into chowder.
- Add corn.
- Return to simmer.
- Add cod; simmer 3 minutes or until fish is opaque.
- Taste and season with fresh ground pepper as desired.
