Empanadas de viento
- 4 cup vegetable oil for frying
- 2 cup all purpose flour
- 1 tbsp salt
- 1/2 cup butter melted
- 1/3 cup cold water
- 1 cup queso fresco , grated
- 1/4 cup scallions cut into thin strips
- 2 tbsp cilantro cut ver thin strips
- 1 all purpose flour to knead & salt to tAste
- 1 tsp baking powder
- combine flour salt & baking powder
- slowly add butter and cold water until dough is formed
- knead dough for a few mins .. then wrap dough & allow to rest for 15mins
- combine quest fresco stallion & cilantro mix well
- make 2 inch balls outta dough .. spread dough until 3 inchs .. stuff one side turn other side over pinch ends .. deep fry or over stove top until golden brown ..
- drain on paper towels .. serve with Spanish rice & enjoy
