Holiday Nut Bread Recipe
- 1/4 c. shortening
- 1/2 c. granulated sugar
- 1/2 c. packed brown sugar
- 2 Large eggs
- 1 1/4 c. buttermilk
- 2 1/2 c. flour
- 3 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1 c. minced nuts
- Cream shortening, sugars, Large eggs and buttermilk.
- Sift together dry ingredients and stir into creamed mix.
- Stir in nuts.
- Grease and flour a 9 x 5 x 3 inch pan.
- Bake at 350 degrees for 60-65 min.
- Variations:
- Cherry Nut Bread: Reduce buttermilk to 1 c.. Add in 1/4 c. cherry juice, 1/2 c. minced cherries.
- Bake 70 min.
- Date Nut Bread: Eliminate buttermilk.
- Add in 2 c. minced dates in 1 1/2 c. boiling water.
- Pumpkin Nut Bread: Substitute 1 c. canned pumpkin and 2/3 c. whole lowfat milk for buttermilk.
- Add in 1 tsp.
- cinnamon.
- Cranberry Cheese Bread: Substitute 1 c. whole lowfat milk for buttermilk.
- Add in 1 c. fresh cranberries, 2 Tbsp.
- grated orange peel, 2 Tbsp.
- orange juice and 1 c. shredded Cheddar cheese.
