Amaretto Cheesecake

  1. Combine nuts, graham cracker crumbs, 2 tbsp.
  2. sugar, cinnamon and butter and mix well.
  3. Firmly press mixture into bottom and 1/2 inch up sides of 9 inch spring form pan.
  4. Beat cream cheese until light and fluffy.
  5. Gradually add 1 cup sugar mixing well.
  6. Add eggs, one at a time, beating well after each addition.
  7. Stir in 1/3 cup amaretto and pour into pan.
  8. Bake at 375 for 45 to 50 minutes or until set.
  9. Combine sour cream, 1 tbsp.
  10. plus 1 tsp.
  11. sugar and 1 tbsp.
  12. amaretto.
  13. Stir well and spoon over cheesecake.
  14. Bake at 500F for 5 minutes.
  15. Let cool to room temperature and refrigerate 24 to 48 hours.
  16. Before serving, garnish with almonds and grated chocolate.
