Spinach Bread from Scratch Abm/Bread Machine
- 12 cup warm water
- 4 tablespoons butter
- 2 tablespoons sugar
- 1 egg
- 1 12 teaspoons salt
- 4 cups all-purpose flour
- 2 tablespoons vital wheat gluten
- 2 teaspoons active dry yeast
- 4 cups packed fresh spinach leaves
- 1 tablespoon olive oil
- 13 cup fresh grated parmesan cheese (or feta)
- 1 garlic clove (or 1/2 teaspoon garlic powder)
- 1 dash nutmeg
- 1 dash marjoram (or oregano)
- 1 egg, well-beaten
- sesame seeds (optional)
- poppy seed (optional)
- Put the dough ingredients into your bread machine according to manufacturer's instructions, set on a 2-lb dough cycle.
- While the dough cycle is doing its thing, make the filling by putting the filling ingredients into a food processor and let chop until you have a fully blended mixture and refridgerate until the dough cycle is done.
- When the dough cycle finishes, roll the dough out onto a silpat or other clean surface into a big flat rectangle.
- Spread the spinach filling evenly throughout the middle of the dough length-wise, then close the dough over the filling until you can't see that there IS filling in there.
- Then, transport to a cookie sheet or jelly roll pan covered in parchment paper.
- Beat an egg well in a small bowl, and brush with the egg.
- Add sesame and/or poppy seeds if you like.
- Run a knife under some warm water and make a few horizontal slashes on top.
- Bake at 350F for 30-35 minutes or until a deep golden brown.
