Pepperoni Stuffed Mushrooms Recipe
- 24 to 28 sm. mushrooms with stems
- 1 med. onion, finely minced
- 1/2 green pepper, finely minced
- 2 ounce. pepperoni, finely minced
- 1 garlic clove, finely minced
- 2 tbsp. melted butter
- 1 tbsp. minced parsley
- 1/4 teaspoon dry oregano
- 1/8 teaspoon pepper
- 1/3 c. chicken broth
- 1/2 c. bread or possibly cracker crumbs
- 3 tbsp. Parmesan cheese
- Preheat oven to 325 degrees.
- Clean mushrooms and remove stems from caps.
- Finely chop stems.
- In large frying pan, saute/fry stems, onion, green pepper, pepperoni and garlic in butter for 5 min.
- Add in all remaining ingredients except mushroom caps and stir over heat for one minute.
- Stuff caps with mix.
- Bake uncovered for 25 min.
- Serve hot in chafing dish.
