Potato, Chikuwa, and Shio-Kombu Aglio, Olio e Peperoncino

  1. Julienne the potato lengthwise.
  2. Soak in a bowl of water to wash away the surface starch, then drain very well.
  3. Remove the seeds from the chili pepper.
  4. Cut the chikuwa in half, then slice into thin strips lengthwise, like the potatoes in Step 1.
  5. Saute the oil, chili pepper and garlic into a pan until fragrant.
  6. Add the potato and saute until it's reached your preference.
  7. Add the chikuwa and shio-kombu, and toss.
  8. Season with black pepper and it's done.
