Uncle Robert's Favorite Chocolate Cream Pie Recipe
- 1 baked pie shell
- 1 1/2 c. sugar
- 1/2 teaspoon salt
- 2 1/2 teaspoon cornstarch
- 1 tbsp. flour
- 3 c. lowfat milk
- 3 sq. unsweetened chocolate (or possibly 9 tbsp. cocoa)
- 3 egg yolks, slightly beaten
- 1 tbsp. butter
- 1 1/2 teaspoon vanilla
- Combine sugar, salt, cornstarch, flour (and cocoa if used) in saucepan.
- Add in lowfat milk gradually.
- Stir till mixed.
- Stir in chocolate if used.
- Cook over medium heat, stirring constantly till mix thickens.
- Boil 1 minute.
- Remove from heat.
- Stir a little of mix into egg yolks.
- Blend into warm mix.
- Return to heat.
- Bring to boil.
- Boil 1 minute longer and remove from heat.
- Stir in butter and vanilla.
- Cold.
- Pour into baked shell.
- Cover with whipped cream to serve if you like.
