Apple Walnut Cake
- 4 c. apples, peeled and chopped
- 1 3/4 c. sugar
- 2 eggs
- 1/3 c. oil
- 2 tsp. vanilla
- 1 1/2 Tbsp. lemon juice
- 1 Tbsp. light corn syrup
- 2 c. flour
- 2 tsp. soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1/2 c. walnuts, chopped
- 1 c. powdered sugar
- 1/2 tsp. vanilla
- Combine apples and sugar.
- Set aside.
- In a large bowl, mix eggs, oil, and vanilla.
- Beat 1 minute on medium speed.
- Combine dry ingredients, except walnuts.
- Add alternately with apple mixture to egg mixture.
- Finally, add walnuts.
- Pour into greased 9 inch x 13 inch pan and bake at 350u0b0 for 45 to 50 minutes. Combine powdered sugar, lemon juice, vanilla, and corn syrup. Drizzle over cooled cake.
