Oyster Sauce
- 4 tablespoons butter
- 1 cup onion (chopped)
- 8 ounces fresh oysters
- 2 cups oyster water
- 1 teaspoon thyme
- 1 teaspoon oregano
- 2 teaspoons basil
- 1 garlic clove (minced)
- 4 tablespoons butter
- 2 tablespoons flour
- 1 cup cream
- salt and pepper, to taste
- Chop the green onions.
- Melt the first 4 Tablespoons butter over medium heat.
- Add chopped onions; cook until soft and translucent.
- In a small bowl, mix oysters, oyster water, thyme, oregano, basil and minced garlic; stir.
- Add the chopped, cooked onions.
- Melt the remaining butter in a medium sauce pan.
- Add the flour.
- Whick together and cook over medium heat to make a thick mixture.
- Remove from heat and add the oyster mixture.
- Return to heat; cook the sauce over medium heat for 5 minutes.
- Set aside.
- Slowly stirr in cream to the sauce.
- Add salt and pepper.
- Serve or use in your favorite recipe.
- You can strain the chunks if desired.
