Oyster Sauce

  1. Chop the green onions.
  2. Melt the first 4 Tablespoons butter over medium heat.
  3. Add chopped onions; cook until soft and translucent.
  4. In a small bowl, mix oysters, oyster water, thyme, oregano, basil and minced garlic; stir.
  5. Add the chopped, cooked onions.
  6. Melt the remaining butter in a medium sauce pan.
  7. Add the flour.
  8. Whick together and cook over medium heat to make a thick mixture.
  9. Remove from heat and add the oyster mixture.
  10. Return to heat; cook the sauce over medium heat for 5 minutes.
  11. Set aside.
  12. Slowly stirr in cream to the sauce.
  13. Add salt and pepper.
  14. Serve or use in your favorite recipe.
  15. You can strain the chunks if desired.
