Italian Sausage And Zucchini Casserole
- 1 lb. Italian sausage, cut in small pieces
- 1/2 c. chopped onion
- 3 zucchini, cut into 1/2-inch slices
- 3 c. hot cooked rice
- 1 tsp. sweet basil
- 1 tsp. salt
- 1/2 c. Mozzarella cheese, shredded
- 1/2 c. grated Parmesan cheese
- 2 c. spaghetti sauce
- In skillet, cook onion and sausage.
- Remove and drain.
- Saute zucchini in remaining fat until transparent.
- Set zucchini aside. Combine 1/2 spaghetti sauce with rice and sausage.
- Put this 1/2 in 2-quart baking dish and add salt and basil.
- Mix well.
- Arrange 1/2 zucchini over top.
- Sprinkle with 1/2 Mozzarella and 1/2 Parmesan cheese.
- Repeat layers of rice with spices, sauce, sausage, zucchini and cheeses.
- Bake at 350u0b0 for 20 minutes.
