Beef Quiche
- 3/4 lb. ground beef
- 1 Tbsp. oil
- dash of red pepper
- 1 Tbsp. onion, minced
- 2 Tbsp. green pepper, minced
- 2 eggs
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/2 c. milk
- 1/2 c. mayonnaise
- 1 Tbsp. cornstarch
- 1 1/2 c. grated cheese
- 1 pie shell (unbaked)
- Heat oil in heavy skillet and brown beef.
- Drain in a colander.
- Add salt, peppers and onion.
- Stir well. Beat eggs well.
- Add milk, then mayonnaise, cornstarch and cheese.
- Stir thoroughly.
- Pour into unbaked pie shell and bake 35 to 40 minutes in a 350u0b0 oven until knife inserted in center comes out clean. Serves 6.
- Serve with stuffed tomato or a fruit salad with asparagus or broccoli.
