Zucchini Pasta Casserole
- 3- 1/2 cups Macaroni
- 1 whole Yellow Onion
- 3 cups Thinly Sliced Zucchini
- Olive Oil
- 3-58 ounces, weight (1/2 Cup) Blue Cheese
- 1 cup Cream
- Salt
- Black Pepper
- 1 cup Grated Cheese
- Preheat oven to 450 degrees.
- Prepare the macaroni according to package instructions.
- Drain it and place in a 7x11 pan.
- While the pastas cooking, slice the onion thinly and brown it slightly in olive oil together with the sliced zucchini.
- Combine with the macaroni, crumbled blue cheese, cream, salt and pepper.
- Top with the grated cheese and bake in the oven until golden brown, about 15 minutes.
- Use a blue cheese that you like, I like to use one that is creamy and rich in taste but not to sharp.
