Sweet and Happy Brownie

  1. Bring the butter and eggs to room temperature.
  2. Sift the ingredients marked together.
  3. Line parchment paper in a square pan.
  4. Roast the walnuts in a toaster oven for about 3 minutes.
  5. Chop into any size you like.
  6. Finely chop the chocolate.
  7. Put the chocolate in a bowl over a double boiler to melt.
  8. Put the butter in a bowl and whisk until creamy.
  9. Add the chocolate and mix.
  10. Add the granulated sugar in three batches.
  11. Mix each time after adding the sugar.
  12. The mixture will start to become fluffy.
  13. Add eggs one by one and mix well.
  14. Add walnuts, and fold gently with a spatula.
  15. Add the ingredients marked in three batches, and cut and fold the entire mixture.
  16. Don't overmix.
  17. Pour the mixture into the pan, and smooth out the surface.
  18. Bake in a preheated oven at 180C for about 30 minutes.
  19. If it looks like it's going to burn, cover with foil.
  20. It's soft just after baking, so cool down a bit in the cake pan.
  21. Once it has cooled, remove from the pan and cool on a rack.
  22. Sprinkle powdered sugar, and cut with a knife.
  23. It's done I recommend to rest until next day to enjoy a nicer flavour and texture.
