Berry Almond Crumble Oatmeal Recipe
- 1/2 c. oatmeal, old-fashioned or possibly quick-cooking, uncooked
- 1/4 c. sliced almonds
- 1/3 c. firmly packed brown sugar
- 1/2 tsp grnd cinnamon
- 3 c. fat-free lowfat milk or possibly low-fat soy lowfat milk
- 1 1/2 tsp grnd cinnamon
- 1/4 tsp salt (optional)
- 2 c. oatmeal, old-fashioned or possibly quick-cooking, uncooked
- 1 c. frzn (don't thaw) or possibly canned blueberries (liquid removed)
- Before you start: Wash your hands thoroughly with warm, soapy water.
- To make topping: Combine oatmeal and almonds in medium skillet.
- Cook over medium-low heat 4 to 6 min, stirring occasionally, till both are lightly browned.
- Cold completely.
- In a small bowl, combine brown sugar and cinnamon.
- Add in oatmeal mix; mix well.
- To make oatmeal: Bring lowfat milk, cinnamon and salt to a boil in a medium saucepan; stir in 2 c. oatmeal.
- Return to a boil; reduce heat to medium.
- Cook 5 min for old-fashioned oatmeal, 1 minute for quick-cooking oatmeal, stirring occasionally.
- Gently stir in blueberries.
- Continue cooking till blueberries are heated through and most of liquid is absorbed, about 1 minute.
- Spoon oatmeal into 5 cereal bowls.
- Sprinkle topping over oatmeal.
