Beef Stroganoff
- 24 oz Beef Steak, thin strips
- 2 tbsp Onion, finely grated or diced
- 1 tbsp Butter
- 2 tbsp Olive oil
- 1 1/2 cup Beef stock
- 1/2 cup Sour cream
- 1/2 tsp Paprika
- 1/2 tsp White pepper
- 1/4 tsp Salt
- 10 oz Mushrooms
- 1 cup Steamed vegetables
- 1 tbsp Dijon mustard
- Heat heavy pan with olive oil, add beef and onion and fry to color.
- Add mushroom dijon and stir.
- Combine sour cream, paprika, pepper and salt.
- Slowly stir sour cream mixture into beef and mustard mixture.
- Cover with stock, bring to boil.
- Simmer for about 15 to 20 mins or until meat is tender.
- Simmer for a further 5 mins and serve over steamed vegetables
