Green Pepper Steak
- 2 Tbsp. vegetable oil
- 1 lb. sirloin steak, cut into 1/8-inch pieces and diced
- 1 tsp. salt
- dash of pepper
- 2 Tbsp. minced onion
- 4 tsp. soy sauce
- boiled rice
- 2 c. bouillon
- 2 green peppers
- 4 small tomatoes, quartered
- 4 Tbsp. cornstarch
- 1/2 c. water
- 1 clove garlic, minced
- Heat oil in heavy skillet.
- Add meat, salt, pepper, onion and garlic.
- Cook over moderately hot heat, stirring constantly, until meat is brown.
- Add bouillon and green peppers.
- Cover closely and cook over low heat 10 minutes.
- Add tomatoes and cook 1 minute longer.
- Blend together cornstarch, soy sauce and water.
- Add to skillet and cook 3 or 4 minutes longer, stirring constantly, until mixture is hot and sauce is thickened.
- Serve at once over hot rice.
