Irish Soda Bread(Yields 1 Loaf)
- 2 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. caraway seed
- 2 Tbsp. sugar
- 1/2 c. margarine
- 1/2 c. raisins
- 3/4 c. milk
- 3 Tbsp. cider vinegar
- Preheat oven to 400u0b0.
- Sift flour, baking soda, baking powder, salt and sugar.
- Cut in butter until looks like corn meal.
- Stir in raisins and caraway seed.
- Mix together vinegar and milk.
- Add liquid to flour mixture and stir vigorously.
- Turn out on floured board.
- Knead 8 to 10 times.
- Shape in round, greased 8-inch pie pan.
- Cut crisscross (side to side).
- Brush top with milk.
- Place in 400u0b0 oven for 15 minutes, then lower temperature to 375u0b0 for 30 minutes.
- Cool 1 hour.
