Vickys Sweet Chilli Sauced Potato Wedges
- 450 grams roasting potatoes, scrubbed clean
- 1 1/2 tbsp sunflower oil
- 6 tbsp sweet chilli sauce, see my recipe link below
- Boil the potatoes whole in their skins, 15 minutes for medium sized potatoes, 25 minutes for large ones, until almost tender
- Preheat the oven to gas 6 / 200C / 400F and line an oven tray with foil or parchment paper
- Drain the potatoes, then when cool enough to handle, cut each potato in half lengthwise then cut each half into 3 wedges
- Spread the wedges out on the baking tray
- Combine the oil and sweet chilli sauce and drizzle over the wedges, toss gently to coat
- Bake for 25 minutes until fork tender
- These go great with my flavoured mayos, or with even more sweet chilli sauce!
