Vickys Sweet Chilli Sauced Potato Wedges

  1. Boil the potatoes whole in their skins, 15 minutes for medium sized potatoes, 25 minutes for large ones, until almost tender
  2. Preheat the oven to gas 6 / 200C / 400F and line an oven tray with foil or parchment paper
  3. Drain the potatoes, then when cool enough to handle, cut each potato in half lengthwise then cut each half into 3 wedges
  4. Spread the wedges out on the baking tray
  5. Combine the oil and sweet chilli sauce and drizzle over the wedges, toss gently to coat
  6. Bake for 25 minutes until fork tender
  7. These go great with my flavoured mayos, or with even more sweet chilli sauce!
