Chicken And Wine A La Sandra
- 3 large potatoes, diced
- 1 small onion, diced
- 1 stick butter
- 1/2 c. oil
- 2 cloves garlic
- 2 lb. chicken cutlets
- 3 Tbsp. bread crumbs
- 1/2 tsp. red pepper
- 1 tsp. garlic powder
- 1/2 c. cooking sherry
- 1/4 c. water
- In a frying pan, melt butter.
- Add potatoes, onion, 1/4 teaspoon red pepper and garlic powder.
- Saute until tender, then add bread crumbs.
- In a shallow dish, put oil and garlic cloves. Pound cutlets and add a couple of tablespoons of stuffing.
- Roll and place, flap down, in baking dish.
- Add cooking sherry, water and 1/4 teaspoon of red pepper.
- Cover with foil for 40 minutes. Remove foil and bake for 20 minutes in 350u0b0 oven.
- Cook time:
- 1 hour.
