Italian Ziti Bake
- 1 lb. ziti
- 1 tsp. vegetable oil
- 1 large onion, chopped
- 2 medium zucchini, diced
- 3 cloves garlic, minced
- 1 (28 oz.) can crushed tomatoes
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/4 tsp. crushed red pepper flakes
- salt and pepper to taste
- 2 egg whites
- 1 (15 oz.) container part-skim Ricotta cheese
- 2/3 c. low-fat Mozzarella cheese, grated
- 1/3 c. grated Parmesan cheese
- Cook pasta according to package directions.
- In large saucepan over medium-low heat, warm vegetable oil.
- Add onion, zucchini and garlic.
- Cover pan and cook until vegetables
- are very soft, about 10 minutes.
- Stir in crushed tomatoes, oregano,
- basil and red pepper flakes.
- Simmer 5 minutes.
- Season with salt and pepper.
