Peppermint Cake Frosting

  1. In top of double boiler, whisk together sugar, water, egg whites and cream of tartar.
  2. Cook, whisking occasionally, over simmering water 4 minutes or until mixture is hot and sugar is dissolved.
  3. Remove from heat; stir in peppermint extract.
  4. Beat with electric mixer at high speed 3 minutes or until mixture forms stiff peaks.
  5. Place one cake layer on serving plate.
  6. Spread with layer of Peppermint Frosting.
  7. Top with second cake layer.
  8. Frost top and side with remaining Peppermint Frosting.
  9. Sprinkle top and side of cake with crushed candies.
  10. Cut into 12 slices.
  11. Refrigerate leftovers.
