Chickpea & Veggie Salad with Greek Vinaigrette
- 2 qt. fresh green beans, cut in half, blanched
- 2 qt. seedless cucumbers, medium dice
- 2 qt. carrots, shredded Target 2 lb For $3.00 thru 02/06
- 2 qt. grape tomatoes, cut in half King Sooper's 1 lb For $0.99 thru 02/09
- 2 qt. canned chickpeas (garbanzo beans), rinsed
- 2 qt. spinach leaves, chiffonade
- 1-1/2 qt. KRAFT Greek Vinaigrette
- 1 qt. sun-dried tomatoes, chopped
- 2-2/3 cups roasted red peppers, julienned
- 1 cup red onions, small dice
- to taste salt and black pepper
- 2-1/2 cups crumbled feta cheese
- Combine all ingredients except cheese.
- For each serving: Spoon 1 cup salad onto serving plate; top with about 1 Tbsp.
