Chili Wraps
- 1 lb. lean ground beef
- 1 Tbsp. oil
- 1/3 c. chopped onion
- 1/8 tsp. each: black, white and red pepper
- few dashes hot pepper sauce
- 1 1/2 tsp. chili powder
- 1/4 tsp. dried oregano leaves
- 3 Tbsp. tomato ketchup
- 1/4 tsp. garlic powder
- 2 c. grated Cheddar cheese
- 8 flour tortillas
- oil for frying
- Saute onion in oil in a large skillet.
- Add the ground beef. Brown and break up.
- Season with black, white and red pepper, hot sauce, chili powder, oregano, ketchup and garlic powder.
- Place 1/8 of meat mixture down center of softened tortilla (see Tip). Sprinkle with 1/4 cup cheese.
- Fold over top bottom edges.
- Fold one side over filling, then other side.
- Secure with toothpicks. Heat oil, 1/2-inch high, in a heavy skillet.
- Fry tortillas folded side down first.
- Turn, brown other side.
- Drain.
- Serve hot.
