Shrimp and Avocado Pesto Genovese
- 100 grams Pasta
- 3 tbsp Basil pesto
- 1/2 Avocado
- 50 grams or more Peeled shrimp
- 1 dash Lemon juice
- 1 Grated cheese
- 1 as much as you want Arugula or basil etc. (for toppings)
- Cut the avocado into bite-sized pieces.
- Sprinkle the lemon juice over the avocado.
- Mix with basil pesto.
- Add some salt (not included in ingredients list) in potful of boiling water, and cook the pasta.
- Add the peeled shrimp to the pot 2-3 minutes before the pasta finishes boiling.
- Add the boiled pasta and shrimp to the mixture you made at Step 1, and combine.
- Serve on a plate.
- Sprinkle on a generous amount of the grated cheese.
- Decorate with arugula or basil.
