Grandma Briden'S Black And White Pie
- 1 (9-inch) baked pie shell
- 1 Tbsp. unflavored gelatin
- 1/4 c. cold water
- 2 c. light cream
- 2 eggs, separated
- 6 Tbsp. plus 1/4 c. granulated sugar
- pinch of salt
- 1 tsp. almond extract
- 1 oz. unsweetened chocolate, melted
- 1 tsp. vanilla extract
- 2 medium bananas, sliced
- Soak gelatin in cold water 5 minutes.
- Scald cream in a heavy saucepan.
- Beat egg yolks with 6 tablespoons sugar and salt. Slowly add cream, stirring constantly.
- Return mixture to the pan and cook over low heat about 5 minutes until thickened.
- Remove from heat and stir in softened gelatin.
- Pour into a bowl and chill until it mounds with a spoon.
- Beat egg whites until frothy. Add 1/4 cup sugar gradually, beating until stiff.
- Fold into chilled custard.
- Divide mixture in half.
- Add almond flavoring to one half; blend well and pour into pie shell.
- To remaining half, add melted chocolate and vanilla flavoring.
- Pour over first layer.
- Chill.
- Just before serving, arrange banana slices in a circle on top of the pie.
- Serves 6 to 8.
