Beard's Spinach Quiche Recipe
- 1 1/2 x -(up to)
- 2 lb Fresh spinach, cooked, liquid removed
- 1/8 tsp Nutmeg
- 1 tsp Dry tarragon
- 1 Tbsp. Lemon juice Salt and pepper to taste
- 2 tsp Parsley, minced
- 1 x (9-inch) pastry shell
- 1/2 c. Feta cheese
- 4 x Large eggs
- 3/4 c. Cream
- 1/2 c. Plain yogurt
- Cook pastry shells 5 min.
- Cook spinach.
- Drain thoroughly!
- Chop very fine.
- Combine spinach with nutmeg, tarragon, lemon juice, salt, pepper and parsley and spread on bottom of pastry.
- Sprinkle cheese on top.
- Beat Large eggs slightly with yogurt and cream and blend well.
- Pour over spinach mix.
- Bake at 350 about 30 min or possibly till custard is set.
- Serves 6-8.
