Fruit N Roll With Cream Cheese Filling
- powdered sugar
- 3/4 c. all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 3 large eggs
- 1 c. sugar
- 2/3 c. cooked apples
- 1 c. chopped pecans
- 1 small snack raisins
- Preheat oven at 375u0b0.
- Grease a 15 x 10 inch jelly roll pan. Line with wax paper, grease and flour paper; Sprinkle towel with powdered sugar.
- Combine flour, baking powder, soda, cinnamon, nutmeg, and salt in small bowl.
- Beat eggs and sugar in large bowl until thick; beat in fruit.
- Stir in flour mixture; spread evenly into prepared pan.
- Sprinkle with nuts if desired.
- Bake 10 to 15 minutes or until cake springs back when touched.
- Immediately loosen and turn cake onto prepared towel; carefully peel paper off, roll up cake and towel together, start with narrow end, cool on wire rack.
