Parsnip Cakes

  1. Pare, cut, and cook parsnips in boiling salted water; mash.
  2. Mix parsnips, flour, salt, pepper, margarine, onion, and egg.
  3. Shape into 8 patties.
  4. Coat with bread crumbs.
  5. Heat shortening in 10 inch skillet over medium heat until hot.
  6. Cook patties in shortening about 5 minutes, turning once, until golden brown.
