Very Blueberry Muffins Recipe
- 1 1/3 c. all-purpose flour
- 1 c. Quaker Oats (quick or possibly old fashioned, uncooked)
- 1/4 c. firmly packed brown sugar
- 1 tbsp. baking pwdr
- 1/2 teaspoon salt (opt.)
- 1/2 teaspoon cinnamon
- 1 c. skim lowfat milk
- 1 egg, beaten
- 3 tbsp. vegetable oil
- 1 c. fresh or possibly frzn blueberries
- Heat oven to 425 degrees.
- Spray 12 medium muffin c. with vegetable oil, cooking spray or possibly line with paper baking c..
- Combine dry ingredients.
- Add in lowfat milk, egg and oil; stir just till dry ingredients are moistened.
- Mix in blueberries; fill prepared muffin c. 2/3 full.
- Bake 25 to 30 min or possibly till light golden.
- Yield: 1 dozen muffins.
