Rare Beef Soup

  1. Quickly boil the noodles in boiling salted water; drain and add a small heap to a bowl.
  2. Place meat strips on top.
  3. Sweat off the aromatic vegetables in a separate pan for 2 minutes; add the chicken stock.
  4. Allow to simmer for 5 minutes.
  5. Add sake, nam pla, lime juice and season to taste.
  6. Add a lot of chopped fresh coriander and pour gently over the noodles and meat.
  7. The heat in the stock will instantly cook the beef.
  8. Serve with a little more chopped coriander.
