Rare Beef Soup
- 1/2 qt. homemade chicken stock (the most important ingredient)
- 4 oz. raw beef (sirloin
- fillet), cut in very thin strips
- 3-1/2 oz. rice noodles
- 1 handful coriander (cilantro)
- 2 cloves garlic, chopped
- 1 piece ginger, chopped
- 2 chillis, chopped
- 3 shallots, chopped
- 2 tbsp. nam pla
- 1 stalk lemon grass, chopped
- 1 tbsp. sake
- 1 tbsp. lime juice
- Quickly boil the noodles in boiling salted water; drain and add a small heap to a bowl.
- Place meat strips on top.
- Sweat off the aromatic vegetables in a separate pan for 2 minutes; add the chicken stock.
- Allow to simmer for 5 minutes.
- Add sake, nam pla, lime juice and season to taste.
- Add a lot of chopped fresh coriander and pour gently over the noodles and meat.
- The heat in the stock will instantly cook the beef.
- Serve with a little more chopped coriander.
