Asparagus Salad With Walnut Oil Vinaigrette Recipe
- 1/4 c. white wine vinegar
- 1 Tbsp. chopped shallot
- 2 tsp Dijon mustard
- 3/4 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1/2 c. vegetable oil
- 1/4 c. walnut oil
- 2 lb asparagus trimmed, and steamed till just tender
- 1/3 c. toasted minced walnuts
- 1 Tbsp. minced fresh parsley leaves Salt to taste Freshly-grnd black pepper to taste
- In a large bowl whisk together the vinegar, shallot, mustard, salt and pepper.
- While continuing to whisk, add in the vegetable oil in a very thin stream, whisking constantly.
- Whisk in the walnut oil.
- Place asparagus on platter and pour dressing over asparagus.
- Garnish with walnuts and parsley.
- Taste and adjust seasoning if necessary.
- Serve immediately.
- This recipe yields 6 servings.
