Linguini With Fresh Heirloom Tomatoes
- 1 lb linguine
- 8 ounces goat cheese, crumbled
- 6 tablespoons butter
- 2 shallots, minced
- 12 cup white wine
- 14 cup fresh parsley, minced
- 14 cup fresh dill, chopped
- 14 cup fresh tarragon, chopped
- 2 tablespoons fresh thyme, chopped
- 2 cups heirloom tomatoes, chopped
- salt & freshly ground black pepper
- Bring a large pot of salted water to a boil and cook pasta according to package directions; drain, reserving 1/2 cup cooking liquid.
- In a medium saucepan, melt butter over medium low heat; add shallots and cook until softened, about 5 minutes.
- Stir in wine and cook about 2 minutes, add parsley, dill, tarragon, and thyme; add in reserved cooking liquid.
- Add pasta to a serving bowl, toss in goat cheese, add herb mixture and toss; add in the tomatoes and toss again.
- Season with salt and pepper and serve.
