Easy Microwave Fried Rice
- 1 cup long grain rice
- 1 1/2 cups boiling water
- 3 teaspoon VEGEMITE
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 3 rashers bacon, finely chopped
- 1 cup sliced mushrooms
- 1 clove garlic, crushed
- 1 cup frozen peas, thawed
- 2 eggs, lightly beaten
- Combine rice, water and Vegemite* in a microwave proof dish.
- Cook on HIGH for 12 minutes.
- Heat a frying pan or wok, add a little oil and cook eggs until just set.
- Remove from pan.
- Heat a little extra oil and stir fry onion, bacon, mushrooms and garlic until onion is tender.
- Add peas and rice and stir fry 2-3 minutes.
- Garnish with slices of egg.
