Grilled Chicken Sandwich

  1. preheat your grill to medium high for 10 min
  2. slice ciabatta rolls in half and drizzle with olive oil.
  3. season with salt & pepper
  4. grill rolls until toasted & golden brown
  5. season both sides of onion slices with salt, pepper & oregano.
  6. drizzle with olive oil
  7. grill onions on both sides just until they have grill marks.
  8. about 2 min per side and remove to aluminum foil
  9. place onions, rossted pepper strips and garlic onto aluminum foil & fold ends together to form a packet
  10. place packet on the grill while you make the chicken
  11. season chicken with salt , pepper & oregano.
  12. drizzle with olive oil
  13. grill chicken on each side until an internal temp of 165 degrees and they have nice grill marks
  14. remove chicken & onion/red pepper packet
  15. while chicken is resting, roughly chop onions & peppers
  16. place 2 to 3 chicken strips on the bottom half of each roll & top with a slice of cheese on each
  17. place on a baking sheet & put them back on the grill until the cheese melts
  18. remove sandwiches to plates and top with onion/pepper mixture and a handful of arugula
  19. enjoy!
