Chocolate Peanut Butter Fudge
- 2 c. granulated sugar
- 2 tsp. cocoa (not heaping)
- 1/4 tsp. salt
- 1 c. milk (whole or skim)
- 1 Tbsp. butter
- 1 c. peanut butter (smooth or crunchy)
- 2 large Tbsp. marshmallows or marshmallow cream (marshmallows optional)
- 1/2 tsp. pure vanilla
- Mix the dry ingredients in a two-quart saucepan.
- Add milk and stir.
- Place on medium heat.
- Stir constantly until it begins to boil.
- Do not stir while boiling.
- Allow to boil 10 to 15 minutes. As mixture boils low in pan, place a very small (tiny) amount of mixture in 1/2 ounce of cold water.
- When it forms a soft ball, the fudge is done.
- Keep testing to avoid overcooking.
- Remove from heat.
- Allow to stand for about 5 minutes.
- Add butter, peanut butter and marshmallows.
- Beat by hand until starts to thicken.
- Add vanilla.
- Beat until it turns from shiny to dull. Do not overbeat as it will become sugary.
- Pour into a buttered platter or container of your choice.
- Allow to cool at room temperature.
- Cut in squares and serve.
