Baked Ziti
- 1/2 lb. lean ground beef
- 1 medium onion
- 1 1/2 garlic cloves, minced
- 1/2 (14 oz.) jar meatless spaghetti sauce
- 1 (14 oz.) small can diced tomatoes (undrained)
- 1 (6 oz.) small can tomato paste
- 6 Tbsp. water
- 1 Tbsp. minced fresh parsley
- 2 tsp. Worcestershire sauce
- 1 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 lb. uncooked medium tube pasta
- 1/2 (8 oz.) carton reduced-fat Ricotta cheese
- 1 c. shredded part-skim Mozzarella cheese
- 1/4 c. grated Parmesan cheese, divided
- 1/4 c. egg substitute
- 1/4 tsp. salt and pepper
- In a large saucepan, cook beef, onions and garlic over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce, tomatoes, tomato paste, water, parsley, Worcestershire sauce, basil and oregano. Cover and simmer for approximately 1 1/2 to 2 hours, stirring occasionally. Cook pasta according to package directions; drain. In a bowl, combine Ricotta, Mozzarella, 2 tablespoons of the Parmesan cheese, egg substitute, salt and pepper.
