Spinach Picante

  1. Cook spinach; drain well.
  2. Reserve liquid.
  3. Melt butter and add flour, cooking until smooth but not brown.
  4. Add onion; cook until tender.
  5. Slowly add spinach liquid and milk.
  6. Cook until smooth.
  7. Add seasonings and cheese, stirring until cheese melts. Add spinach and stir.
  8. Put into a 2-quart casserole dish; top with stuffing crumbs.
  9. Bake for 25 minutes at 325u0b0.
  10. Serves 4 to 6.
